THE DELICATE AUTUMN FAVOUR
Finely slice the onion and brown with extra-virgin olive oil. Add the potatoes and the Squash, already peeled and diced. After a few minutes, cover with water or vegetable stock and add a pinch of salt. Leave to simmer for around 30 minutes and blend until smooth and creamy. Add PKU GOLIKE, mixing. Flavour with herbs, if desired. Finally, a spoonful of soft rice cheese, a teaspoon of oil and pepper may be added, or if you prefer, protein-free croutons, prepared in the oven.
